Overview:

To provide exceptional service to each individual guest and to achieve the maximum revenue in the assigned outlet. Must supervise the entire assigned lounge and bar.

 

 

NOTE: This job position is open only for Thai Nationality at this time.

Responsibilities:

  • Ensure that voiding and charging procedures are done as per company guidelines. Ability to calculate figures
  • Supervise the assigned beverage outlets as a separate profit center, assuming responsibility for all revenues and expenses
  • Be fully responsible for the assigned bar stock, inventory and discrepancies. The Company holds the Bartender responsible
  • Ensure that no item or drink leaves the bar without charging. Ensure all administrative procedures relating to beverage control are followed
  • Maintain the Par level, ensure all products required for the operation of the bar are available at all times and reports any supply issues to the Beverage Management. Comply with the procedure for requisitioning supplies and beverages
  • Carry out inventories after each cruise under the guidance of the Controller/Beverage Manager
  • Ensure correct pouring at Company and guest-sponsored parties
  • Report for duty five minutes prior to schedule time to ensure proper bar set-up is done, all items and beverages are available.
  • Brief wait staff in case of special parties, daily cocktails or events
  • Ensure that wait staff of the assigned bar report for duty punctually wearing the correct uniform and nametags at all times
  • Ensure atmosphere in the assigned bar is as per standard; music not too loud, lighting, set-up
  • Ensure that all wait staff in the assigned bar provide courteous and professional service at all times
  • Ensure that wait staff are on station, that lounge and bar is clean and call for help if needed
  • Ensure hot appetizers are served at the correct time and that bar snacks are set up in the lounge
  • Ensure right measurements for cocktails, spirits and liquors are practiced, as well as all standards are followed within the Mixology program
  • Socialize with clients when time allows
  • Ensure all vessel records and forms per Company policy, manual and directives are in the assigned area.
  • Attend daily/weekly Beverage Management Meetings as requested
  • Attend any training sessions set by the ship’s Management
  • Inspect assigned Lounge and Bar with respect to physical condition, condition of equipment and decoration to ensure prompt repair and maintenance through reporting to the Management
  • Respond to changes in the Beverage Department as dictated by the vessel and the Company
  • Carry out any reasonable assignment as may be assigned by the Beverage Manager
  • Maintain a good working relationship with own colleagues and all other departments as well as superiors and Head Office
  • Have a complete understanding of and adhere to the vessel policies relating to Fire, Hygiene, Health and Safety
  • Maintain a high standard of personal appearance and hygiene at all times
  • Have complete understanding of the Vessels Rules and Regulation and adhere to the regulations contained therein
  • Ensure all Company policies and regulations are implemented, followed and maintained
  • Be willing to work on weekends, public holidays and night time.
  • Ensure all efforts are made within the assigned bar to meet and exceed revenue budgets and guest satisfaction
  • Assist in the building of an efficient team of Staff by taking an active interest in their welfare, safety and development
  • Motivate and train all wait staff whenever required
  • Carry out on-the-job training at all times. In particular BLDs, WA’s and GPAs are the responsibility of the Bartender
  • Strong interpersonal communication skills
  • Report for duty on time
  • Serve alcoholic beverages only according to Company policies and laws regulating the service of liquor
  • Product knowledge of all beverage offerings
  • Excellent knowledge of Mixology is a must
  • Must have knowledge of international cocktail recipes and international alcohol brands
  • Maintain bar with good presentation and condition
  • Knowledge of all shipboard services
  • Participate in all Company training
  • Excellent personal hygiene and appearance
  • Assume responsibility beyond individual roles
  • Deliver professional presentation every day for every guest
  • Follow Sanitation Guidelines (USPH)
  • Follow all garbage-handling procedures
  • Proper use and sanitation of equipment
  • Follow dress code and ensure that all BLDs, WA’s and GPAs in the assigned area do so
  • Apply salesmanship in order to maximize sales volume
  • Practice up-selling techniques
  • Assist in training of the new crew and practice always on the job training for BLDs, WA’s and GPAs
  • Must be able to lead crew
  • Support supervisor to achieve a better product
  • Accountable for Cost of Sales, Inventory and POS transactions
  • Work as a team and be attentive to detail
  • Cooperate in the safety and accident prevention programs including drills
  • Carry out any other reasonable duties and responsibilities as assigned

Qualifications:

  • Extensive knowledge of varying brands and quality of liquors.
  • Basic Knowledge of new and old world wines
  • Basic knowledge of Cigar and Cigar Service.
  • Supervision experience required – at least in the past in charge of one bar.
  • Basic understanding of all technical machines used within the beverage department such as draft beer machine, coffee machine, etc.
  • Physically fit and able to lift more than 20kg.
  • Ability to read, interpret and demonstrate the preparation of drink recipes.
  • Ability to investigate and solve passengers complains, follows up and meet/exceed guest expectations.
  • Basic knowledge of beverage handling procedures with regard to public health standards.
  • Cost awareness and full understanding of inventory control and inventory taking.
  • Extensive Mixology experience
  • Strong interpersonal and leadership skills.
  • Ability to train and guide assigned waiting staff.
  • Excellent appearance, self-starter.
  • Revenue and guest satisfaction focused.
  • Ability to conduct spirit tasting and cocktail demonstration in public for passengers and staff.
  • Excellent open communication style with all levels of employees.
  • Willing to work on weekends, holidays, and seven days a week and as business requires.
